Spiced Orange Slices

I found myself with a fridge full of oranges and a hankering for canning recently. I didn't want to do more marmalade so I found a recipe for Spiced Orange Slices that sounded really good. I used the recipe from "The Complete Book of Small-Batch Preserving" by Ellie Topp and Margaret Howard.

I found this recipe to be pretty easy to do, but it was time consuming because you kept having to add things then cook, add things then cook etc. It took awhile. Here is the recipe:

4 lg oranges
8 cups hot water
1 tsp salt
1 cup granulated sugar
1/2 cup lightly packed brown sugar
1/2 cup each of cider vinegar and water
1/4 cup of corn syrup
8 whole cloves
4 cardamon pods
4 cinnamon sticks
1/2 tsp peppercorns

1)Combine whole unpeeled oranges, 8 cups hot water and salt in a large saucepan. Bring to boil, reduce heat, cover and simmer for 45 minutes or until fruit is tender. Drain Oranges, discard liquid and cool.




2) Cut oranges in half crosswise and then into very thin slices.

3)Combine sugar, brown sugar, vinegar, water, corn syrup, cloves, cardamon, cinnamon and peppercorns in large saucepan. Stir over high heat until sugars have dissolved. Reduce heat and cook for 10 minutes. Add orange slices cover and cook gently for 20 minutes. Remove from heat and let stand for 5 minutes. Remove and discard cardamon and cinnamon.

4)Remove orange slices from liquid with a slotted spoon and pack into jars. Pour liquid and whole cloves over oranges to within 1/2 inch of rim. Process 10 minutes for 1/2 pint jars.

My opinion of this recipe. It claimed that it made 4 half-pint jars. I had enough oranges for 3 but only enough liquid for 2. I choose to fill a wide mouth pint jar with my oranges because then I could stack them nicely on top of each other but that jar took up all of the liquid. The oranges turned out yummy and beautiful but I only got 1 pint jar out of the process. I definitely think I will make more next winter for Christmas presents, but I will need to find a recipe that makes a larger batch
